Our Story

Rooted in British Tradition

Imagined by Sir Terence Conran at Butler’s Wharf in 1993 and reimagined by The Evolv Collection, Chop House & Tavern brings together a collection of modern British chop houses and taverns shaped by heritage, provenance and timeless hospitality.

From the City of London to riverside dining rooms and neighbourhood taverns, each location reflects the enduring spirit of the traditional British chop house while embracing a more thoughtful and forward-looking approach to food, farming and gathering.

At Chop House & Tavern, we proudly source our beef, pork, lamb and chicken from award-winning English farmers, hand rearing animals of outstanding pedigree and championing some of the finest examples of breeding, animal husbandry and regenerative farming practices in the country.

By working with farms that prioritise sustainability, traceability and responsible land management, we celebrate a more thoughtful approach to British dining while continuing the traditions of the modern chop house.
